Opening-to-closing control loop

Open and calibrate

Warm equipment, clean surfaces, check ingredients, dial in espresso, taste the first approved shot.

Measure throughout service

Use recipe tools consistently; do not drift into “memory pours.”

Protect milk and ingredients

Maintain correct storage, avoid cross-contact and follow product-specific handling guidance.

Clean as you go
