Espresso fundamentals
01 · Build a reliable base before adding anything else.
Build a reliable base before adding anything else.
Most simulated coffee drinks depend on espresso. If the base is weak, harsh or inconsistent, milk and syrup only hide the problem temporarily.
Grind
Controls resistance and flow.

Dose
Controls available coffee mass and strength.

Time
Acts as a practical proxy for extraction behavior.

Prototype house espresso zone
| Variable | Typical simulation target | Too low / fast | Too high / slow |
|---|---|---|---|
| Grind setting | 4–5 / 10 | Coarser flow, lower resistance, risk of thin/sour cup | Finer flow, higher resistance, risk of dry/bitter cup |
| Dose | 18–20 g | Can feel weak or under-structured | Can slow extraction and intensify body |
| Extraction | 27–30 sec | Potential under-extraction | Potential over-extraction |
| Shot count | 1–2 | Gentler intensity | Higher coffee intensity and bitterness risk |
In Brew Challenge: Expert scenarios may deliberately shift grind and time because the “station” needs dialing in. Read the ticket carefully—do not assume every recipe starts from the default value.
03 · Shot-building workflow
Shot-building workflow
Prepare and purge
Start with a clean, warmed group and dry basket.
Dose consistently
Use the recipe target; distribute evenly before tamping.
Tamp level
Consistency matters more than excessive force.
Start extraction immediately
Observe flow, time and cup behavior.
Taste, not just time
Time guides diagnosis; sensory result confirms the adjustment.
An espresso runs much faster than target and tastes thin. What is the most logical first adjustment?
